Fresh Salsa~2011

1 lb onions (ours!)
1 & 1/2 lb peppers
(mostly Jalapeno & some banana) (ours!)
4 & 1/2 lb tomatoes- peeled, not seeded
(roma, porter & rutger) (ours!)

2 T. salt
10-11 oz tomato paste
7 T. lime juice (bottled Real Lime)
5 T. olive oil
4 & 1/2 t. cumin
2 & 1/2 t. garlic
1/4 t. powdered cayenne

Process in the food processor.
Pour into clean jars, and keep the extras in the freezer.

Serving suggestion: serve with Costco's Organic Corn Chips!

note: we used all the Jalapenos we had, and it was not enough...
